Ah, summer at last! The sun is shining brightly, the days are stretching out and the heat is enveloping us warmly. It’s the perfect time of year to savor the pleasures of outdoor living and enjoy the long summer evenings to the full.

These gradually fade to make way for the first grapes, a phenomenon known as nouaison. Throughout the summer, two stages of growth follow one another: veraison, when the grapes take on their full color, and maturation, during which they become enriched with sugar, their acidity diminishes and their aromas fully develop. At the end of September, it’s time to harvest the dry white grapes.
